This Biscoff and Apple Traybake is my most recent brainchild! A beautifully moist traybake that is not too sweet and filled with juicy apples and crunchy biscuits! I have been wanting to make some kind of apple cake for a while now and was wondering about some good pairings for it. I often see people having apple slices dipped in Biscoff spread as a snack and thought to myself: That might actually work really well in a cake!

As all traybakes should be, this Biscoff and Apple traybake is very easy to make and takes no time at all! The most time-consuming part is grating the apples, but once that´s done, the cake mix is finished in a jiffy!
All the ingredients are added to one bowl and mixed together! Some of the apple and biscuit chunks are scattered over the cake batter once it has been transferred to the tin and then all you have to do is bake it!

What are Lotus Biscoff Biscuits?

If you haven´t heard of Lotus´s Biscoff Biscuits before – then where have you been living? They are the small caramel biscuits that you are given on the side when you order a tea or coffee in a café.

I remember as a child, my dad would take my sister and I to a kids “exercise class” (basically just running around playing ballgames with other children for an hour) at the local sports centre. Whilst we were doing that, my dad would sit in the centre´s café and have a coffee. He´d always get a Biscoff biscuit with it, and when my sister and I came out there would always be a fight over who would be allowed to have it!
Haha, eventually I think we took it in turns every week… But clearly, the fact that I remember this so vividly means that Biscoff biscuits have always been a big thing in my life!

Anyway, the company (Lotus) has also created a Biscoff spread now, that is becoming increasingly popular! Everywhere I look I see recipes for Biscoff cheesecakes or truffles! I only came across the spread a year ago when I was working as an Au Pair in Italy. I bought a jar, gave it a try (tastes so good!) but never got round to using it in some of my baking! So now, finally, it was my jar of Biscoff spread´s time to shine!

So many amazing textures in just one simple traybake!

This Biscoff and Apple Traybakes combines so many amazing textures in one, making it a delight to eat! Firstly, the sponge is really airy and light, and the addition of grated, juicy apples makes the cake beautifully soft and moist! At the same time, some of the apples are left as small chunks and broken up Biscoff biscuits and a crunchy texture to the traybake, giving it a bit of bite! So many interesting textures and flavours at once – and all of that achieved in a really simple traybake! What more could you ask for?

Just an afterthought…

I simply dusted my Biscoff and Apple Traybake with some icing sugar to serve. But if you wanted to go that extra-mile, or add a bit more sweetness to it, then you could also make a water icing to drizzle on top (just combine some icing sugar with a little water or milk to make a thick paste. Check out my Easy Iced Biscuits recipe for more info on that). Alternatively, you could perhaps also create a drizzle using some extra Biscoff spread. Heating a little of the spread in a pot over a low heat (or the microwave) to make it a bit runnier, allowing you to drizzle it over the top of the cake!

Just an afterthought – giving everyone a few extra ideas so that you can tailor this Biscoff and Apple traybake to your specific taste!

A perfect afternoon treat, bake sale winner and you can save some for later!

As with any traybake, they make the perfect afternoon treat to serve with a cup of tea or coffee! Traybakes are also fantastic for bake sales as they are quick and easy to make, you can easily double the recipe and a piece of this cake is perfect for buying and picking up with your hands at a bake sale stall!

This Biscoff and Apple Traybake is also suitable for freezing! Simply put some of the cake in a freezer bag and then freeze until needed! Whenever you then have some surprise visitors and want to whip out a piece of cake to impress, you can take some of this cake out of the freezer and have something delicious to serve up in absolutely no time – and no work involved!

The Best Baking Equipment to Use

The great news is, that you don´t need a lot of baking equipment to make this Biscoff and Apple Traybake.

As with all my traybakes, I use this 34x20cm brownie tin by Masterclass. It´s great quality and I have been using it for years!

I´d also recommend using an electric hand whisk to start off with in this recipe, just to make sure the eggs, oil, sugar and Biscoff spread are thoroughly mixed! If you don´t have one, a balloon whisk should be fine – you´ll just have to put in a bit of elbow grease! To fold in the flour I´d recommend using a large plastic or silicone spatula.

Finally, you´ll need a small sieve if you want to dust the cake with some icing sugar. I recently bought this set of three sieves which have served me very well so far!

Biscoff and Apple Traybake

Recipe

Ingredients:

FOR THE BISCOFF AND APPLE CAKE:

  • 3 Gala apples, 2 grated and one cut into small chunks
  • 120g Lotus Biscoff Biscuits (about 15-16 biscuits), broken into pieces
  • 2 large eggs
  • 150ml sunflower oil
  • 1 tsp vanilla extract
  • 175g soft light brown sugar
  • 150g smooth Lotus Biscoff Spread
  • 225g self-raising flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • A little icing sugar, to serve

Method:

  1. Start by preheating the oven to 180°C and lining a 33x20cm brownie tin with baking paper.
  2. Wash and core the apples, then slice into quarters (I leave the skin on but you can peel them if you like). Coarsely grate two of the apples, and thinly slice and cut the third one into small chunks. Then break the biscuits into smaller pieces. Set aside until needed.
  3. In a large mixing bowl, use an electric hand mixer to whisk together the eggs, vanilla and sunflower oil until well incorporated and frothy. Next, whisk in the light brown sugar followed by the Biscoff spread. Beat until completely smooth.
  4. Sift in the flour, baking powder and cinnamon and use your spatula to gently fold the dry ingredients into the wet ones. Once the flour is almost completely incorporated, add the grated apples and ⅔ of the apple chunks and broken biscuits.
  5. Mix until all the ingredients are just combined, trying to not over-mix!
  6. Pour the cake mix into the prepared brownie tin and level the surface. Scatter over the remaining apple and biscuit chunks, pressing them down gently into the cake mix.
  7. Bake the Biscoff and Apple Traybake in the preheated oven for about 30 minutes, until an inserted skewer comes out clean.
  8. Leave the tin on a wire rack and allow the cake to cool completely, before cutting into 18 (6×3) pieces. Dust with some icing sugar to serve.
