Really simple to whip up, these scrolls are ready in just under an hour!

Ingredients (makes 16 scrolls)

  • 2 3/4 cups Plain flour
  • 3 TBS Sugar
  • 1/2 tsp Salt
  • 2 1/4 tsp Dried instant yeast
  • 1/2 cup Water
  • 1/4 cup Milk
  • 2 TBS Unsalted butter
  • 1 large Egg
  • FILLING
  • 1/4 cup Unsalted butter at room temperature
  • 1/4 cup Brown sugar
  • 2 TBS Ground cinnamon
  • GLAZE
  • 1 cup Icing sugar
  • 1 tsp Vanilla extract
  • 2 TBS Milk

Method

  1. Preheat the oven to 200 degrees and turn off after 10 minutes or just before placing rolls in oven.
  2. In a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside.
  3. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted (about 30-45 seconds). Stir the butter mixture into the flour mixture. Add the egg and knead with hand or with stand mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl and let rest for about 5 minutes.
  4. After the dough has rested for 5 minutes, roll it out in a 15x9 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough.
  5. Roll up the dough tightly and cut into 16 even pieces. Place in a lightly greased square pan, with room in between each one to allow room to rise, and lightly cover with alfoil.
  6. TURN OFF the oven and place the cinnamon buns in the oven to rise for 20 minutes.
  7. Keep the buns in the oven but remove the foil and turn the oven back on to 190 degrees.
  8. Bake the cinnamon rolls for 15-20 minutes or until golden. Remove from oven
  9. To make glaze, mix the powdered sugar, vanilla and 2 Tablespoons milk together until smooth and lump free. Drizzle over warm rolls.

Notes

If you want a coffee glaze, swap the 2 TBS milk for 2 TBS Coffee (I make a strong white coffee and use that) Or make both and have half and half!

Easy Peasy Vanilla and Cinnamon Scrolls - Real Recipes from Mums (2024)

FAQs

What type of flour for cinnamon rolls? ›

Bread flour is hands down the best option when making cinnamon rolls. Any good cinnamon rolls recipe is going to usually call for bread flour instead of other kinds of flour. This is because bread flour is high in protein, usually containing 11% to 13% more protein than other kinds of flour.

How do you keep cinnamon roll filling from running out? ›

Starch will stabilize your filling

The answer is starch. Its gelatinization power is employed thicken and bind ingredients in cooking and baking. The only tough part: most starches thicken once heat is applied, and since cinnamon rolls stand on-end, we can't risk the filling running out while the dough proofs.

Can I freeze homemade cinnamon rolls? ›

Make Ahead Instructions – Freezing: Baked rolls can be frozen for up to 3 months. Thaw overnight in the refrigerator and warm up before enjoying. You can also freeze the unbaked rolls and here's how: bake the rolls in step 9 for only about 10 minutes. Cool completely, then cover tightly and freeze.

What happens if you add too much flour to cinnamon rolls? ›

ONLY add as much flour as needed to handle the dough. It's better for the dough to be sticky at the start than to add too much flour and wind up with dense rolls, instead of light and fluffy ones.

Is it better to use bread flour or all-purpose flour for cinnamon rolls? ›

Use bread flour: bread flour is available at most grocery stores and it makes ALL the difference in achieving softer, fluffy, perfect cinnamon rolls. JUST TRUST ME. Make sure you flour your work surface and the rolling pin: this is to prevent the cinnamon rolls from sticking to the surface or to the rolling pin.

Why are my homemade cinnamon rolls tough? ›

Don't Overmix the Dough

When making cinnamon rolls, mix the dough just until the ingredients are incorporated and the dough is smooth and soft. Overmixed dough leads to tough cinnamon rolls. The dough is ready when it pulls away from the sides of the mixing bowl and feels tacky but doesn't stick to your fingers.

Can I leave cinnamon rolls out overnight to rise? ›

Instead of letting the rolls rise at room temperature and baking them, you'll cut and arrange the rolls in the baking pan, tightly cover them with plastic wrap, immediately transfer them to the fridge and let them rest overnight. (Do not leave them out at room temperature for any longer than needed.)

Why do my cinnamon rolls fall after baking? ›

If you let your cinnamon rolls rise for too long you can over-proof them. This can lead to dense rolls or rolls that collapse after baking.

Do cinnamon rolls need to be refrigerated after baking? ›

Do you need to refrigerate cinnamon rolls? Unfrosted cinnamon rolls do not need to be refrigerated and will keep best at room temperature. Iced cinnamon rolls, and especially rolls with cream cheese frosting, should be stored in the fridge.

Should I proof cinnamon rolls before freezing? ›

Best two options are:
  1. Right after shaping/forming them before their final proof.
  2. After the bake and they are cooled down. I would recommend option 1. But it does mean more time between you and cinnamon rolls when you decide you want them.

Can you overproof cinnamon rolls? ›

You can refrigerate the rolls for up to 12 hours, but try not to go any longer. The rolls are still prone to over-proofing if left in the fridge too long; and the cinnamon-sugar filling can melt and make the bottoms of the rolls syrupy and damp if left unbaked for too long.

Do you roll cinnamon rolls tight or loose? ›

3) Don't roll the dough too tightly

It also ensures the rolls proof properly (they have enough room to expand!) and bake evenly, all the way through to the center.

Why pour milk on cinnamon rolls before baking? ›

Julie Clark, the blogger behind the website, notes that after years of research, she discovered that the key to getting perfectly gooey rolls is to “pour heavy cream over the cinnamon buns before baking. THIS is the secret ingredient and what makes the rolls rich and gooey.”

What kind of flour is best for rolls? ›

AP flour can be used in the making of rich or enriched breads such as soft rolls, or brioche,” says Chef Stephen, which are meant to be softer in nature, rather than crusty.

What's the difference between bread flour and self rising flour? ›

Self-raising flour is effectively plain (all-purpose) flour that comes pre-mixed with baking powder. Strong (bread) flour is flour that contains more gluten than plain (all-purpose) flour. This makes it particularly suitable for making bread, which depends on developing gluten chains within the dough.

What is cinnamon bun dough made of? ›

In the bowl of a stand mixer fitted with the paddle attachment, stir together melted butter, sugar, sour cream, egg, and remaining ¼ cup (60 grams) milk. In a large bowl, whisk together 3⅔ cups (459 grams) flour and salt. Stir half of flour mixture into butter mixture.

Can I use all-purpose flour instead of bread flour? ›

Bread Flour Substitute

You can always substitute all-purpose flour for bread flour one for one in any recipe that calls for it. Your bread might not raise quite as high or have quite as much chew, if you are using all-purpose flour, but it will still be delicious and homemade and all the good things.
